Slow Weekend Meals: Cozy Cooking for Rainy Days

by Christian Ching

Rainy weekends are one of the better reasons to cook in the Portland metro. When the afternoon is gray and there is nowhere to be, a pot on the stove is a good use of the day, and the best meals for that mood are the ones that take their time.

Pick the right kind of dish

Braises, stews, soups, and beans reward slow cooking and are nearly impossible to rush. These are the meals where another hour on the stove actually improves things, which suits a weekend with no schedule. Choose something forgiving and the afternoon takes care of itself.

Start with what you have

A good slow-cooked meal starts with aromatics, onion, carrot, celery, and garlic softened in a good glug of oil. Add whatever protein you have, then enough liquid to barely cover it, and let it simmer low. Season in stages rather than all at once, and taste as you go.

Beans and grains are patient

A pot of dried beans cooked slowly with a bay leaf and some onion is one of the cheapest and most satisfying things you can make. Lentils are quicker but just as forgiving. Both love a finishing splash of vinegar or lemon and a drizzle of good oil, which wakes up a long-simmered flavor.

Let the oven do the work

If you would rather not stand at the stove, a low oven does the same job with less attention. Put a covered pot in and check it now and then, because braises and roasts only get better the longer they go. It is also the easiest way to cook a big batch that carries into the week.

Make enough for later

The point of a slow weekend meal is that it feeds more than one day. Cool what is left, portion it, and freeze what you will not eat in a few days. A simmering pot on Sunday is a head start on a busy Tuesday, and that is worth more than it sounds.
